The consul of Pascalux Boirie was a career senior executive in a leading French insurance groups.
Historically, he has a passion for cooking , for the pleasure of inventing "unusual tastes", a culinary creation by combining the flavors and contemporary cuisine.
In 2007, after having definitively left the insurance world, he decided to devote himself entirely to his passion by combining various experiences in several quality restaurants, including Michelin-starred establishment.
In 2009, he enlisted in specialized vocational training (BEP chef). Meanwhile, for an entire year, he collaborated with the young chef Mathieu Garrel, emblematic of the new French cuisine, offering fine cuisine combining quality, tradition and originality in his restaurant "Belisarius" (Paris).
